Sous Chef
Job Description
Are you passionate about authentic Ukrainian cuisine and eager to showcase your culinary expertise? Ruta, the first Ukrainian restaurant in the DMV area, is seeking a talented and dedicated Sous Chef to join our team. As a Sous Chef, you will work closely with our Executive Chef in a creative and fast-paced environment to prepare and serve high-quality dishes that celebrate the rich traditions of Ukrainian culinary art.
Responsibilities:
1. Food Preparation & Execution:
- Assist the Executive Chef in preparing authentic Ukrainian dishes, adhering to recipes and quality standards.
- Oversee food preparation to ensure consistency, proper presentation, and timely execution of all meals.
2. Kitchen Operations:
- Support in managing day-to-day kitchen operations, including staffing, inventory, and cleanliness.
- Help create prep lists, manage food orders, and ensure kitchen efficiency during busy periods.
3. Team Leadership:
- Supervise and train kitchen staff to ensure their performance meets the restaurant's standards.
- Foster a positive work environment for staff to thrive and remain motivated.
4. Menu Collaboration:
- Work with the Executive Chef to aid in menu planning, specials, and seasonal offerings rooted in authentic and fusion Ukrainian cuisine.
5. Quality & Hygiene Compliance:
- Enforce food safety procedures to meet health and safety regulations.
- Maintain cleanliness and organization of the kitchen at all times.
Required Skills & Qualifications:
1. Culinary Expertise:
- Proven experience working as a Sous Chef or similar leadership role in a professional kitchen (3+ years).
- Knowledge of traditional Ukrainian dishes and/or Eastern European cuisine is highly desired.
2. Leadership & Teamwork:
- Strong leadership skills to guide kitchen staff while working collaboratively with the Executive Chef and management team.
3. Problem Solving & Adaptability:
- Ability to handle high-pressure situations and manage a fast-paced kitchen environment.
- Creativity in solving culinary challenges and adapting to feedback or customer requests.
4. Excellent Organization:
- Must be detail-oriented in food preparation, inventory management, and workflow tasks.
5. Passion for Culinary Arts:
- A deep appreciation for authentic Ukrainian flavors and traditions.

At our restaurant, we combine classic Ukrainian dishes such as Borscht, Holubtsi, and Varenyky with modern fusion options, reflecting the evolution of Ukrainian society and its resilience and strength.
RUTA opened its doors in April 2023, with our first location in Southeast Washington, DC. In August 2024, we began our operations in Bethesda, Maryland.
